The grapes are de-stemmed and crushed, macerating the skins at low temperatures of around 4°C. The maceration process, which is carried out before pressing, takes 8 hours and allows optimal extraction of all the components in the grapes, such as polyphenols, anthocyanins, tannins and resveratrols, and minerals and aromatic precursors. The aging process includes infusions of organic grapes and French oak to ensure an excellent aromatic result.
