Pairs well with: game pies, grilled meats, mushroom dishes, truffle dishes and spicy mountain cheeses
A wine that comes from a selection of grapes from the best Sangiovese vineyards grown on tuff, clay, limestone and muddy soil at 300 metres above sea level. The vineyards are organic, so the yield is reduced to just 60 quintals per hectare. The grapes are harvested by hand and the alcoholic fermentation takes place in small conical wooden containers whose lids are inverted and where the fermentation of the must takes longer. Malolactic fermentation takes place in 40 hl oak barrels, where the wine continues to mature for at least another 18 months. Ageing after bottling continues for at least another 12 months.
