The grapes were originally called Tokay d'Alsace and then Tokay Pinot Gris. This one originated in Burgundy. Its grey character is due to the natural mutation of its skin. These purple grapes give a great wine that is one of the most famous white wines in the world. The soil consists of clay and limestone.
Vinification - The grapes are pressed for 7 hours on a pneumatic press. Fermentation takes place at low temperatures with natural yeasts. When archiving the wine, it is advisable to respect the following 3 rules: no light, no temperature changes and constant humidity.
