The bottle contains yeast and must be placed on the head and degassed before use. The colour is medium pinkish. The aroma is youthful, pleasant, inviting, a little spicy after red fruits, especially berries. Very dry in the mouth, with a more varied, fuller flavour. Medium length. A very beautiful, characteristic sparkling wine from Refosca.
Pairs well with: aperitif or with prosciutto with yellow melon.
The idea behind making Moia / Royaz sparkling wine was to capture the distinctive strawberry aromas of Refoschka, with the original fermentation taking place in the bottle for their family and friends to enjoy all year round.
Secondary fermentation is done in an unusual way - the wine base is bottled with fresh cider, starting the fermentation process in the bottle in front of you. This is a characteristic combination of the so-called classical method and the ancestral method, or methode ancestrale, better known for the so-called Pet-Nat sparkling wines, which stands for the French term petillant-naturelle.
