100% GARNACHA TINTORERA
Vinification: the grapes are harvested at optimum ripeness. Grapes are picked at optimum maturity. They are juiced and not crushed, cold pre-fermented for subsequent fermentation at controlled temperature. Temperature-controlled fermentation, maximum temperature not exceeding 28 °C, with gentle pumping. The wine is macerated with the skins for approximately 2 hours.
For a further 20 days, the wine is fermented in French and Hungarian oak barrels. After completion, it is aged for 10-12 months in new 70 % and used 30 % barrels. It is then aged in the bottle for at least 6 months before being put on the market.
