SONO was born from a project started in 2006, first with the renunciation of the use of any synthetic fertilizers and "systemic" pesticides in the vineyard, then continued in the cellar with surprising winemaking and aging tests without the use of sulfur dioxide. After the first phase of oxygen saturation from the must (hyper-oxygenation), cellar technology allows to avoid any contact with oxygen at every step of the production process. SONO will have the same longevity as a normal white wine vinified using traditional techniques, and its production will only be possible in the best years to obtain perfectly healthy and ripe grapes.
