Variety: 60% Syrah + 40% Tempranillo
Pairs with: beef, veal and lamb, stews and roasts
Production process: hand-harvesting the grapes at their optimum ripeness. Harvested in the early morning hours in small 15 kg boxes due to the low temperatures. Fermentation takes place in stainless steel tanks at a controlled temperature of max. 27 °C. One part of the wine is then aged for 20 months in French oak barriques and the other in 'Foudre Navarro' barrels. These are special wooden barrels of large volume, up to 1000 l
Decanting: not necessary, but we highly recommend that you try decanting the wine. You will get to a completely different level of taste and experience of the wine.
