Ruby color. Fruity aroma of forest fruits, overripe strawberries, liquorice. Flavour of ripe to overripe red fruit. Medium body, medium acidity, fine tannin. This wine needs time. Immediately after opening, it shows almost nothing. Open it and come back to it the next day or decant it for at least an hour or two. Have a fresh paste with tomato sauce and parmesan. No added sulphites.

Puristica is a biodynamic natural red wine made from the Pinot Noir/Pinot Noir grape variety. Dark reflections in ruby red colour. The nose is reminiscent of subtle nuances of berries, later cherries, some black pepper and strawberry pith, even hints of violets. The palate is fruity, soft and velvety, with a fine acid structure in the background. With ripe, tasty, crunchy tannins, it shows classic elegance and finesse from the variety. A fine, all-natural Pinot that outperforms some expensive French Burgundies.

Pairs well with: fresh pasta with tomato sauce and parmesan

Puristica grows in warm vineyards in the Leckerberg region. The loamy loam soils are very pleasant to warm and their high lime content underlines the varietal character of Pinot Noir. Pinot Noir has a particularly positive, harmonising response to biodynamic preparation and the species-rich flowering foliage in the vineyard, which is reflected in the vibrancy of this wine.

Fermentation takes place spontaneously in all the components of the grapes.

From harvest to bottling, 12 months elapse. Throughout this time, the wine remains un-sulphurised, aged 80% in used barriques and 20% in new barriques. It is then not filtered and gently bottled as it was in nature.

At the moment the wine is young, it should breathe for at least 1,5 - 2 hours before consumption, preferably decanted. Tip: It is advisable to taste it over several days, as it develops very nicely on contact with air.
