An excellent red wine fermented and aged in amphorae coated with natural pine resin.
Pairs well with: tenderloin with plum sauce.
Grape variety: 50% Aragonez and 50% Trincadeira
Trincadeira gives the wine a wonderful aromatic and fresh fruit character and Aragonez an earthy structure. After gentle pressing, both grapes and about 25% of their skins are filled into 8 amphorae of 350 to 450 litres for natural fermentation. Once fermentation is complete, the skins drop to the bottom of the containers and olive oil is poured on top to form a natural stopper to prevent oxidation. After a short rest in early January, the wine is blended in stainless steel and a small amount of SO2 is added. It is bottled a few weeks later. The result is a wonderfully expressive wine that retains texture and balance. It is a deliciously unique, fresh and exuberant natural wine that pays homage to the past. Its origins date back to the 1100s. 3 200 bottles.
