Saperavi is also an indigenous variety of Georgia: its name means something like grape dye, a reference to its deep dark colour and reddish flesh. Saperavi wines are characterised not only by their rich colour, but also by their always high acid and tannin levels. As is customary in the Papari Valley, Rkatsiteli also goes through Qvevri's multi-level terracing system, which allows the wines to be moved from one earthenware vessel to another using gravity alone and without pumping.
